What is Alpha Amylase (α-amylase)?

What is Beta Amylase (β-amylase)?

Beta amylase is an exoenzyme also known as 1-4-a-D- glucan maltohydrolase (EC 3.2.1.2.) which facilitates the hydrolysis of (1->4)-alpha- D glucosidic linkages in polysaccharides in order to remove successive maltose units from the non-reducing ends of the chains. Basically, it acts on starch, glycogen, and some polysaccharides.
