What is an Induction Cooker?

In an induction cooker, the heat passes directly to the cooking pot rather than heating up the surface of the cooktop, unlike in an electric cooktop. This makes the pot or pan heat evenly. This also ensures a smaller energy loss during the cooking process.

Pros and Cons of an Induction Cooker

An induction cooker requires less amount of energy to heat because the heat transfer method is efficient. According to some estimates, about 90% of the electromagnetic energy generated in this cooktop is delivered to the food. Induction cookers can cook food quickly; for instance, it takes about half of the time taken by a gas cooker to boil water.

However, there are some disadvantages as well. Induction cookers tend to be expensive. Moreover, these cooktops can only heat pots or pans made fromferromagnetic material. E.g. stainless steel, cast iron, carbon steel, etc. Therefore, we cannot use aluminum cookware.

What is a Normal Cooker?

A normal cooker or gas cooker (gas stove) uses a burner with a burner assembly that is attached to a small gas valve that connects to the main gas line. Upon turning the knob, the intake valve opens, and the gas tends to flow through a venture tube. The venture tube is a wide pipe that narrows in the middle. Thereafter, gas can enter through one of the wide ends, which is then passed into the narrow section where the pipes tend to widen again. This causes the gas to move into this section by releasing pressure. Sucking oxygen into the air hole also happens here. Thereafter, the oxygen mixes with the gas to make it combustible. Following this step, the oxygen and gas mixture flows into the burner.

A burner is made with a simple hollow metal disk. It has holes punctured through the perimeter. There is a gas pilot light or electric pilot that sits on one side of the burner, and it sends a small flame or spark. This causes the ignition of the oxygen and gas mixture when it flows through the holes in the burner. Turning the knob to a higher heat setting increases the flow of gas and air where the flame gets larger as well.

Induction Cooker vs Normal Cooker in Tabular Form

There are several advantages of using a normal cooker: the ability to change the temperature instantly, which moves from high to low heat upon turning a knob, and providing an easy and controllable open flame. However, there are some disadvantages as well. For example, it is comparatively less efficient as a fuel source. The heat energy loss in a normal cooker is large as the heat can escape into the air instead of reaching the food in the cookware.
